The drink is made from grape pomace by the traditional Georgian method that originates in Kakheti. Under the classic method the grape pomace is kept in a qvevri together with the wine through the winter. In spring it is lifted from the qvevri and distilled. In the past this was done in stone vessels; today it is done in copper.
After distillation the chacha is matured in oak casks for 12 months, which gives the drink its beautiful golden colour and rich aroma.
