The drink is made from grape pomace by the traditional Georgian method that originates in Kakheti. Under the classic method the grape pomace is kept in a qvevri together with the wine through the winter. In spring it is lifted from the qvevri and distilled. In the past this was done in stone vessels; today it is done in copper.
The chacha is matured for 6 months on freshly picked bunches of grapes, which gives it a more delicate and pronounced grape aroma. Recommended served cold, with ginger.
